I’m so excited to share my favorite pudding recipe that I created during the summer. I’m sure it doesn’t come as a surprise that it’s a chia seed pudding! 😀 Everybody who’s been reading my blog knows, that I’m obsessed with chia seeds due to their amazing health benefits.
This Chocolate Caramel Raspberry Chia pudding recipe is vegan, raw, gluten-free and refined sugar-free. And I have to say that I LOVE it!! I’ll be devouring these a lot in the future for sure! Ingredients
Chocolate layer:
- 1 medium ripe banana
- ½ cup coconut milk
- 2 tbsp chia seeds
- 1 tbsp raw cacao powder
- 1 tbsp maple syrup
Caramel layer:
- ¼ cup crunchy peanut butter (salted)
- ½ cup coconut milk
- 2tbs chia seeds
- 2 tbs maple syrup
- (1tsp lucuma powder, optional)
Raspberry layer:
- 1 cup raspberries
- 2 tbs chia seeds
Instructions
For the chocolate layer:
- Mash banana with a fork in a bowl, until smooth.
- Add all remaining ingredients and mix well. Put in the fridge to soak overnight. Chia seeds will get soft and expand.
Caramel layer:
- Process all ingredients until smooth. Place in ther fridge overnight.
Raspberry layer:
- Mash the raspberries with fork and add chia seeds. Let set in the fridge preferably overnight.
- In the morning, add each layer to the jar. Decorate with fresh berries if desired.
