Here’s a great way to get your kids eat spinach and avocado 😉  – Spinach Choco Mousse

 

Studies have shown that spinach helps maintain your active brain function, memory and mental clarity.

 

Spinach contains a lot of iron, but it also contains oxalic acid, which blocks the absorption of iron, calcium and other minerals.

So it’s good to combine spinach with foods that contain vitamin C  to increase absorption of minerals. Even a little bit of freshly squeezed lemon juice will help.

INGREDIENTS:

 

 

* 2 frozen bananas

* handful of baby spinach (organic)

* 1 cup coconut milk

* ½ small avocado

* 2 medjool dates

* 2 tbs raw cocoa powder

* 1tsp vanilla (liquid)

 

 

INSTRUCTIONS:

 

Blend all ingredients in a blender.
